Easiest Pumpkin Muffins Ever


These are great Breakfast muffins, and super easy.  You need one box cake mix - I used carrot cake, but you can use spice, yellow, white... Mix the cake mix with 1 small can pumpkin.  The batter will be very dry.  If you prefer a "caky" muffin, add a tablespoon of water.  Spoon batter into greased(or sprayed) muffin pan.  Bake at 350 for 30-40 minutes. Enjoy!

Crock Pot Pork with Apples & Kraut

Brown a Pork Tenderloin in olive oil untill browned. While Pork is browning, rinse a jar of Kraut and spoon into Crock Pot.  Quarter an onion and place on top of Kraut.  Drizzle with Pancake Syrup.
Transfer Pork to crock pot.  Slice a large apple and distribute over the Pork.  Drizzle, again, with syrup. Sprinkle with cinnamon.
Cover, and cook on low for 8-10 hours.

A Really Basic Potato & Corn Soup

To me Fall is the time I change menus from grilled chicken, burgers, and steak to Soups, Stews and Caseroles.  This is a very basic Potato Soup - I added fresh corn.  You can add, bacon, cream, cheddar cheese or whatever you like to make it heartier.  

The basic recipe is:

Cook 1/2 onion in olive oil ,over medium heat, in you soup pot.  When the onion wilts add 1 clove chopped garlic and a T. butter - salt and pepper.  Cook for 2-3 minutes.  Sprinkle 2T. flour over the mixture and cook 2-3 more minutes.  Add 4 cups each Chicken broth and diced, peeled potatos.  Bring to a boil, cover, lower heat, and simmer for 10-12 minutes(or until potatos are tender).  

That's the basic soup. Now you can get creative - I added fresh corn and carrots.  Try cream, bacon, cheese...

Spaghetti Squash with diced Tomatoes, Onion, Garlic and Basil

Here's a great way to use Spaghetti Squash...

Cut and gut squash.  Season with salt and pepper. Butter a baking dish.


Bake squash at 350 degrees untill tender - about 45 minutes. While Squash is baking.  Combine diced tomatoes, onions, garlic.  Season with salt and pepper to taste.  Drizzle with a nice olive oil.


Shred squash with a fork.  Top with diced vegetables, toss, and ENJOY!  You can add cheese if you like.

More Cobbler

 Black Berry Cobbler 

Half cup each - flour, sugar and milk
2-3 Tbl Butter
Combine all ingredients. Batter will be like a pancake batter. Pour in a 8" buttered cake pan. Top with berries. Sprinkle with more sugar. Bake at 350 for about 40 minutes- until golden .

Easiest Slow Cooker Pot Roast

You need:

1 beef roast (3lbs should feed 4 people)
1 jar Salsa

Place all in crock pot, cook on low(10-12 hours)
 If you want you can brown the roast, but it's not necessary.
 
That's it - cook all day!

Household Weed Killer


1 Gallon White Vinegar

1 cup salt

1 Tbl Dawn Dish Liquid


Mix it all together.  Spray liberally on weeds.  Repeat if necessary.  Lasted about 8 weeks for me!
